Old-Fashioned Peanut Butter Cookies

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup creamy or chunky peanut butter (do not use natural/freshly ground)
  • 2 teaspoons vanilla extract
  • 1 cup packed golden brown sugar
  • 1 cup granulated sugar
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F. Line 2 large baking sheets with parchment paper.
  2. Mix flour, baking powder, and salt in a medium bowl.
  3. Using an electric mixer, beat butter, peanut butter, and vanilla until well blended. Beat in both sugars.
  4. Stir in half of the flour mixture. Add eggs one at a time, stirring well after each. Mix in remaining flour.
  5. Roll 1 heaping tablespoon of dough into a 1 3/4-inch ball. Place 2 1/2 inches apart on prepared sheets.
  6. Flatten with the back of a fork in a crosshatch pattern. Bake 14 minutes until dry on top and golden on bottom.
  7. Cool on sheets 5 minutes, then transfer to wire racks.
