Homemade Egg Noodles
Four-ingredient egg noodles — no special equipment, ready in 25 minutes, perfect for soups and stroganoff

Ingredients
- 2 large eggs
- 3/4 teaspoon salt
- 2 tablespoons milk
- 1 1/2 to 2 cups all-purpose flour
Instructions
- Mix eggs, milk, and salt until smooth. Stir in 1 cup flour until smooth. Add more flour a spoonful at a time until dough comes together in a ball but is still slightly sticky.
- Turn out onto a floured surface and knead with well-floured hands until no longer sticky, 3–5 minutes. Rest 10 minutes.
- Roll out very thin — less than 1/4 inch thick, nearly paper thin.
- Cut into long strips with a sharp knife or pizza wheel, as narrow or wide as you like.
- To cook immediately: add to boiling water and cook until tender, about 2–3 minutes. Or drop into boiling soup.
Notes
To store: dry on a rack until they won't stick together, then refrigerate a few days or freeze. Cook from frozen in boiling water or soup.
