Homemade Lasagna Noodles

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 large eggs
  • 3 large egg yolks
  • Pinch of salt

Instructions

  1. Mound flour with salt on a large pastry board or counter. Make a well in the center.
  2. Break eggs and egg yolks into the well. Scramble each with a fork as it's added.
  3. Slowly bring flour in from the inside edges of the well, mixing with the eggs. Continue until eggs are no longer runny.
  4. Using your hands, bring the outside edges in and form a large mass. Use only as much flour as needed to make a soft ball.
  5. Knead the dough like bread, pushing down with the heel of your hand, for 5 to 7 minutes until smooth and satiny.
  6. Wrap in plastic wrap and let rest 30 minutes.
  7. Use a pasta roller to roll to 1/8 inch thick (KitchenAid attachment: position 6). Cut into 12-inch strips.
  8. Precook in boiling water for 30 seconds, then transfer to ice water. Dry on clean kitchen towels.
