Homemade Lasagna Noodles
Fresh egg pasta noodles for lasagna — rich, thin, and worth the 45 minutes

Ingredients
- 2 1/2 cups all-purpose flour
- 2 large eggs
- 3 large egg yolks
- Pinch of salt
Instructions
- Mound flour with salt on a large pastry board or counter. Make a well in the center.
- Break eggs and egg yolks into the well. Scramble each with a fork as it's added.
- Slowly bring flour in from the inside edges of the well, mixing with the eggs. Continue until eggs are no longer runny.
- Using your hands, bring the outside edges in and form a large mass. Use only as much flour as needed to make a soft ball.
- Knead the dough like bread, pushing down with the heel of your hand, for 5 to 7 minutes until smooth and satiny.
- Wrap in plastic wrap and let rest 30 minutes.
- Use a pasta roller to roll to 1/8 inch thick (KitchenAid attachment: position 6). Cut into 12-inch strips.
- Precook in boiling water for 30 seconds, then transfer to ice water. Dry on clean kitchen towels.
