Farmers Eggs with Creole Seasoning
Hearty skillet breakfast with potatoes, andouille sausage, eggs, and Creole seasoning

Ingredients
- ¼ cup sautéed onion, chopped (optional)
- 2 tablespoons avocado oil
- 1 cooked cold baked potato, peeled and sliced or cubed
- ⅓ cup andouille sausage (about ⅙ of a link), sliced and quartered
- 4 eggs, beaten
- Salt and pepper to taste
- Creole seasoning (Tony Chachere's Lite) to taste
- ½ to 1 cup shredded cheddar cheese
Instructions
- Sauté chopped onions in a little oil, stirring often, until fully cooked and translucent. Set aside.
- Heat avocado oil in a skillet over medium heat.
- Fry the cubed cooked potato, turning to get a light golden color.
- Add sausage and cook briefly.
- Add a little Creole seasoning to the potatoes.
- Push potato to the side; spray the center of the pan if needed.
- Pour beaten eggs into the center, season everything with salt and pepper, and let one side set.
- Add onion if using.
- Flip eggs in sections to cook the other side — this is when everything comes together.
- Add more Creole seasoning to taste.
- Top with shredded cheese and let it melt just before serving.
Notes
Serve with half a sliced avocado or fruit. Can also be wrapped in a flour tortilla with salsa for a breakfast burrito.
