Ingredients

  • 1 pound sweet potatoes (Red Garnet recommended)
  • 1 tablespoon oil (olive oil recommended)
  • 1/2 teaspoon harissa spice blend or smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon plus 1/8 teaspoon salt, or to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. Peel the sweet potatoes and cut them into 1/2-inch rounds, then cut each round into 1/2-inch cubes. Keep the cubes similar in size so they cook evenly.
  2. Transfer the sweet potato cubes to a bowl. Add the oil, harissa spice blend, garlic powder, salt, and black pepper, then toss until evenly coated.
  3. Preheat the air fryer according to the manufacturer's instructions. Arrange the sweet potatoes in a single layer, cooking in batches if necessary.
  4. Air fry at 400°F for 10 minutes, shaking once halfway through. Begin checking at 8 minutes because air fryer cooking times vary.
  5. Serve as a snack or add to wraps, tacos, salads, or bowls.

Notes

The sweet potatoes may take 8–12 minutes depending on the air fryer and cube size. Later batches may cook faster in an already-hot air fryer. Other seasoning options include cumin, coriander, curry powder, paprika, berbere spice, or cinnamon.
