Homemade Biscuit Mix
All-purpose biscuit mix to keep on hand — makes biscuits, waffles, or pancakes

Ingredients
- 8 cups all-purpose flour
- 4 teaspoons salt
- 1/4 cup double-action baking powder
- 1 1/2 cups shortening
Instructions
- Sift baking powder and salt with 2 cups of flour.
- Add remaining 6 cups of flour, sift again, and stir to combine.
- Drop shortening by spoonfuls on top of the flour mixture. Cut in with two knives or mix at low speed until the mix resembles corn meal.
- Store in a covered container at room temperature. Do NOT refrigerate. No preservatives — recipe may be halved.
Notes
Biscuits (from 2 1/2 cups mix)
- 2 1/2 cups biscuit mix
- 2/3 cup milk
Stir milk into mix. Turn onto a pastry cloth and knead gently 2–3 times. Roll to 1/2 inch thick. Cut and bake at 425°F for 12–15 minutes.
Biscuit Mix Waffles (serves 3)
- 2 eggs
- 1 1/4 cups milk
- 2 tablespoons melted butter
- 2 tablespoons sugar
- 2 cups biscuit mix
Beat eggs; add sugar and milk. Stir in biscuit mix. Add butter. Bake in a hot waffle iron until steaming.
Biscuit Mix Pancakes (makes 16 medium)
- 2 eggs
- 1 cup milk
- 1 tablespoon sugar
- 2 cups biscuit mix
Add sugar, milk, and eggs to biscuit mix and stir until only dampened. Bake on a hot griddle. Turn when bubbly.
