Ingredients

Instructions

  1. Add the olive oil, turkey, onion, broccoli, peppers, garlic, and ginger to a large skillet over medium heat.
  2. Cover and cook for 5 to 7 minutes, stirring occasionally and breaking up the meat with a spatula.
  3. Meanwhile, cook the rice.
  4. Once the turkey is browned and crumbly, make the sauce: combine the coconut aminos, rice vinegar, garlic, and ginger in a small bowl and stir.
  5. Pour the sauce into the turkey skillet and bring to a light simmer. Simmer for 8 to 10 minutes, until the sauce has thickened slightly and the meat and vegetables are coated.
  6. Assemble the bowls with a scoop of rice and a scoop of the turkey mixture. Garnish with sesame seeds if desired.

Notes

Notes: the original serves this over 4 cups of cauliflower rice (cooked on low in a drizzle of olive oil for 5 to 7 minutes); here it is served over rice instead. The cooked broccoli and peppers are optional. Coconut aminos is the soy-free, gluten-free alternative to soy sauce; check the rice vinegar label for added sugar. Fresh or frozen vegetables work (thaw frozen first). Leftovers keep in the fridge for up to 4 days.
