Ingredients

  • 1 cup white sugar
  • 6 tablespoons butter
  • 1/2 cup heavy whipping cream

Instructions

  1. Have all ingredients measured and within arm's reach before you start — once sugar melts it moves fast.
  2. In a heavy-bottomed saucepan over medium-high heat, melt sugar, stirring constantly. It will look amber-brown when ready.
  3. Add butter and stir; the sauce will bubble vigorously — that's okay.
  4. Add heavy cream, stirring constantly, until sauce comes together. Reduce heat and serve.
  5. To reheat: place container in a pan of hot water until warmed through.

Notes

The dry-melt technique gives deeper caramel flavor. Works beautifully on ice cream, popcorn, apples, and French toast. For a lazy version see Easy Caramel Sauce.
